Jamie Oliver. Love him. Firstly, he assumes you know nothing. Secondly, he’s brilliant. This video is like five minutes. In it, you learn three ways to chop. Essential. Learn this, and you’re “sorted for life” as the Brits say. Start slowly, and over time you’ll look more and more like a master chef.

More importantly, when it comes time to cook, you’ll be diving in there with confidence and competence—cooking more, saving more on your food budget, visiting the farmer’s market with relish (the feeling, not the condiment).

Still more importantly, armed with knife skills and a passion for local food, you can (wittingly or not) become part of the green movement.

So get chopping. Then do like Jamie does: Share these skills with young people.
